These festive cookies will help keep any holiday dessert table in mint condition!
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 2 tsp. vanilla extract
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 3/4 cups flour
- 1 cup old fashioned oats
- 1 cup sweetened grated coconut
- 1 1/2 cups chopped pecans*
- 1 1/2 cups peppermint baking chips
Directions
- Preheat oven to 300 degrees F
- In large bowl, use an electric mixer to blend the butter, brown sugar, and granulated sugar until creamy; about 3 minutes
- On low speed blend in the egg, vanilla, baking soda and salt
- Gradually add flour, and blend completely
- Use a spatula to mix in the oats, coconut, pecans, and baking chips
- Drop dough by 1-2 tablespoons onto lightly greased cookie sheet
- Bake at 300 degrees for 10-15 mins, or until cookies are lightly browned around the edges and soft in the middle
- Place on a wire rack to cool
Makes about six to seven dozen cookies
*Chopped walnuts work too, or no nuts, if you are allergic
