Sasha’s marvelous Mint Crunch Cookies


These festive cookies will help keep any holiday dessert table in mint condition!


  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 3/4 cups flour
  • 1 cup old fashioned oats
  • 1 cup sweetened grated coconut
  • 1 1/2 cups chopped pecans*
  • 1 1/2 cups peppermint baking chips


  • Preheat oven to 300 degrees F
  • In large bowl, use an electric mixer to blend the butter, brown sugar, and granulated sugar until creamy; about 3 minutes
  • On low speed blend in the egg, vanilla, baking soda and salt
  •  Gradually add flour, and blend completely
  • Use a spatula to mix in the oats, coconut, pecans, and baking chips
  • Drop dough by 1-2 tablespoons onto lightly greased cookie sheet
  • Bake at 300 degrees for 10-15 mins, or until cookies are lightly browned around the edges and soft in the middle
  • Place on a wire rack to cool

Makes about six to seven dozen cookies

*Chopped walnuts work too, or no nuts, if you are allergic
