Allison’s Single Serving Pancake

Ever craving one massive pancake? This one is fluffy, crispy, and pretty healthy and doesn’t fall apart (even without an egg!) The secret ingredient…tahini!! It acts as a fat you’d get from oil and the binder you’d get from an egg. Here’s the recipe:

Ingredients

• 1/3 cup whole wheat flour
• 1/3 cup + splash more almond milk
• 1 tbsp tahini
• 1 tbsp (yes, tbsp) baking powder
• 1 tsp maple syrup
• pinch of salt
• splash vanilla extract
• dash cinnamon

Directions

Mix it all together. Pan fry in coconut or olive oil. Flip once the top is mostly cooked through. Top with maple syrup and vegan butter (or a berry sauce if you feel like getting fancy). IT’S SO GOOD.
